Just beautiful tangy green leaves all season long. This is such a beautiful soup that’s so much more than the sum of its parts. It did all the work for me throughout all of my testing trials; I just held on and gasped in delight along with the fam at the flavor and took a few photos! ❤️
This is similar to the sorrel soup grandmas used to make here in Burgenland, although it was much simpler - onions, potatoes, foraged wood sorrel. Sorrel and potatoes just go together!
Thanks for asking! Not super sour, but rather I think really well-balanced. I’ve done a lot of trials to get the creaminess and tangy vibrancy balnced just right. Our family just adores this soup!
Thanks! And I love the Profusion variety of sorrel, (which is available at Richters Herbs), which doesn’t send up a seed stalk. So it stays just in beautifully tidy leaf form the whole season. And it’s one of the first things to come up in spring, even here in my cold climate of zone 6a. It’s an absolute treasure of a crop!
